Which platform should I use: Shopify, Webflow, WordPress or React?

It depends on the job. Shopify for serious e-commerce, Webflow or WordPress for content and marketing sites you want to edit yourself, React or Next.js when it is a real product or app. I recommend the one that fits, not the trend.

Do you both design and build?

Yes. Design and front-end build under one roof, so nothing gets lost between the mockup and the live site. For heavy back-end work I bring in a trusted developer.

Will I be able to edit the site myself?

Yes. Where it makes sense I build on a CMS and hand over with training and docs, so your team can update content without calling me every week.
